Yields: 9” pie
INGREDIENTS:
Crust:
- 2 cups pecans
- 2 cups almonds
- 4 medjool dates
- 1 TBSP honey
Banana cream filling:
- 4 very ripe bananas
- 4 TBSP almond butter
Top Layer:
Caramel:
- 12 medjool dates
- ½ cup almond butter
- ½ cup cold water
STEPS:
- Ground nuts in food processor, then add honey and pitted dates.
- Fill the bottom of a 9” pie dish with a layer of the nut mixture.
- Make the banana cream filling by mixing bananas and almond butter in clean food processor. Layer on top of piecrust and place in freezer to set for about 20 minutes.
- To finish off, slice bananas and spread on top of pie.
- Then blend dates, water and almond butter to make caramel and drizzle on top.
- Serve immediately!
